Aubergine burgers

Quick and easy vegetarian burger that is packed full of flavour and goodness

Method

  1. In a bowl, combine the olive oil, cumin, coriander, garlic, lemon zest and season. Lay the aubergine slices on a plate or board and coat each side with the mixture allowing it to soak in.
  2. When the BBQ is ready, cook the slices for 3-4 minutes on each side until they are tender all the way through.
  3. While they’re cooking slice the buns and toast them over the coals and season the ricotta. Put some salad leaves and slices of pepper into each bun, put the cooked aubergine slices on top.
  4. Finish with a spoon full of ricotta and a drizzle of tahini.
