1/2 Onion (diced)
3tsp Bart Raj masala
100g Potatoes
150g Peas

Method
Heat the oven to 200C. Heat ½ tbsp oil in a frying pan, gently cook the onion for 3 mins until softened then add the Raj Masala and then the cooked potatoes and peas, season and stir well.
Lay the filo out on a board, shortest side closest to you and cut in half, top to bottom, so you end up with 6 narrower strips of pastry.
Working with one piece of pastry at a time and covering the rest with cling film to prevent it drying out, brush the pastry with a thin layer of oil, place 2 teaspoons full of mixture at the bottom left side of the pastry and fold the bottom right corner up over it in a triangle. Continue folding, quite tightly, in a triangular fashion until the strip is all rolled up. Brush with more oil and ensure all of the edges are sealed.
Repeat with the rest of the pastry and mixture then bake on a non-stick baking tray for 15-18mins until golden.
