- 2tbsp Oil
- 1/2 Onion (diced)
- 3tsp Bart Raj masala
- 100g Potatoes
- 150g Peas
- 3 Sheets of filo pastry
Method
- Heat the oven to 200C. Heat ½ tbsp oil in a frying pan, gently cook the onion for 3 mins until softened then add the Raj Masala and then the cooked potatoes and peas, season and stir well.
- Lay the filo out on a board, shortest side closest to you and cut in half, top to bottom, so you end up with 6 narrower strips of pastry.
- Working with one piece of pastry at a time and covering the rest with cling film to prevent it drying out, brush the pastry with a thin layer of oil, place 2 teaspoons full of mixture at the bottom left side of the pastry and fold the bottom right corner up over it in a triangle. Continue folding, quite tightly, in a triangular fashion until the strip is all rolled up. Brush with more oil and ensure all of the edges are sealed.
- Repeat with the rest of the pastry and mixture then bake on a non-stick baking tray for 15-18mins until golden.
