Mango Chutney

There's nothing quite like home-made. So drop the shop-bought jars and make your own delicious mango chutney.

- 2tsp Nut oil
- 1 Escallion shallot
- 1tsp Bart black mustard seeds
- 1 Mango
- 1 Lime
- 1tsp Bart chilli paste
- 2tbsp Golden caster sugar
- Small bunch of mint (chopped)
Method
- Heat the oil in a large pan and fry the shallots gently for 3-4 minutes. Add the mustard seeds and cook for a further minute until they become fragrant.
- Add the mango, zest of ½ the lime and the juice of the whole lime, chilli paste, sugar and a pinch of salt. Cook with the lid on for 15 minutes, stirring occasionally, until the fruit is soft. Remove from the heat to cool while and stir in the mint to serve.
Any chutney that isn’t finished can be stored for a day or two in the fridge. It's great with cheese and cold meat as well as Indian dishes.
