Malabar chickpea soup

- 2tsp Oil
- 1 Onion (diced)
- 1 Carrot (diced)
- 2tsp Bart garlic paste
- 1tbsp Bart Malabar masala
- 400g Chopped tomatoes
- 400g Chickpeas (drained)
- 200g Coconut milk
- 200ml Vegetable stock
- Fresh coriander
Method
- Heat the oil in a large saucepan and gently cook the onion and carrots with the lid on for 5 mins until they start to soften. Turn the heat up to medium and stir in the Malabar Masala for a few moments until it becomes fragrant.
- Tip in the tomatoes, chickpeas, coconut milk and stock and simmer for 15 mins. Remove from the heat, season and blend till smooth. Take care not to splash yourself with the hot soup.
- Divide between 4 bowls and sprinkle each with coriander leaves and an extra drizzle of coconut milk.
