- 2tbsp peanut oil
- 1tbsp Bart black garlic paste
- 1tbsp Bart mild curry powder
- 1 red onion
- sliced
- 1 red pepper
- sliced
- 100g baby corn
- 1 pak choi
- 4 spring onions
- 300g wok ready udon noodles
- 2tbsp soy sauce
- 2tbsp mirin
- 2tsp sesame seeds
Method
- In a large wok heat the oil gently then add the garlic paste and curry powder. Turn up the heat and add all of the vegetables except the spring onions. Stir fry for 2 minutes then add 100ml water and continue to cook on a high heat for another 4-5 minutes until the vegetables start to soften.
- Add the spring onions and the noodles to the pan, gently breaking up the noodles as they warm. Tip in the soy and mirin, string to coat everything. Cook for a further minute until the noodles are heated through.
- Divide between two bowls and sprinkle with sesame seeds.
