Gochujang and Lime Korean Cold Noodles

Our take on Korean Bibim-guksu. A cold noodle dish served in a spicy Gochujang sauce and topped with cucumber, spring onion, shredded chicken, and a soft boiled egg. Perfect served in hot weather for a refreshing lunch or dinner.Ingredients

For the noodles
- 180g soba noodles or wheat noodles (or Korean somyeon noodles, if you can find them)
- 150g cooked shredded chicken (leftover roast chicken works perfectly)
- 1/3 cucumber, thinly sliced or ribboned
- 2 spring onions, sliced
- 1-2 soft boiled eggs
- Sesame seeds
- Lime wedges
For the gochujang dressing
- 2 tbsp gochujang paste
- 1 tbsp soy sauce
- 1 tbsp rice vinegar or lime juice
- 2 tsp sesame oil or olive oil
- 1 tsp honey
- 1 tsp Bart Garlic Paste
- Splash of cold water to loosen
Method
1. Cook the noodles according to packet instructions. Drain and rinse under cold water until completely cool.
2. In a bowl, mix together the Gochujang, soy sauce, rice vinegar (or lime juice), sesame oil (or olive oil), honey and Garlic Paste until smooth.
3. Toss the cold noodles through the sauce until coated.
4. Top with the shredded chicken, cucumber, spring onions, and halved soft-boiled egg.
5. Finish with sesame seeds and a squeeze of lime.
