125g butter (softened)
75g caster sugar
1 egg yolk
200g plain flour (sifted)
1/4 tsp Bart ground cinnamon
1/2 tsp Bart mixed spice
1 lemon (grated zest only)
75g currants
2tbsp milk

Method
Preheat the oven to 200C/Gas 6. In a bowl, beat the butter and sugar together with an electric whisk, until light and fluffy.
Beat in the egg yolk, reserving the white. Stir in the flour, spices, lemon zest and currants. Gradually stir in the milk until the dough starts to come together – you may need slightly less, or a little more, milk.
On a lightly floured surface, gently knead the dough until smooth. Roll out to about 5mm thick then cut out shapes using a rabbit cutter or a round cutter.
Place the biscuits on to a non stick oven tray and bake for 15 minutes until just golden. Cool on a rack and store in an airtight tin.
