- 125g butter (softened)
- 75g caster sugar
- 1 egg yolk
- 200g plain flour (sifted)
- 1/4 tsp Bart ground cinnamon
- 1/2 tsp Bart mixed spice
- 1 lemon (grated zest only)
- 75g currants
- 2tbsp milk
Method
- Preheat the oven to 200C/Gas 6. In a bowl, beat the butter and sugar together with an electric whisk, until light and fluffy.
- Beat in the egg yolk, reserving the white. Stir in the flour, spices, lemon zest and currants. Gradually stir in the milk until the dough starts to come together – you may need slightly less, or a little more, milk.
- On a lightly floured surface, gently knead the dough until smooth. Roll out to about 5mm thick then cut out shapes using a rabbit cutter or a round cutter.
- Place the biscuits on to a non stick oven tray and bake for 15 minutes until just golden. Cool on a rack and store in an airtight tin.
