The ultimate Italian-Asian fusion pasta! Buttery chilli and garlic spaghetti made with umami soy sauce and oyster sauce. Finished with plenty of Parmesan and spring onion this delicious dish breaks all the rules.
1. Bring a large pot of salted water to the boil. Add the spaghetti and cook until al dente.
2. Meanwhile, melt the butter in a large frying pan over a medium heat. Once the butter has melted, add the chilli and garlic and sizzle for 1 minute. Stir through the soy sauce and oyster sauce. Cook for a further minute before removing from the heat.
3. Once the pasta is cooked, reserve a cupful of pasta water and add the drained pasta into the frying pan over a medium heat.
4. Stir for 2-3 minutes adding splashes of pasta water until you have a glossy sauce. Stir through the grated Parmesan.
5. Serve with the spring onion and an extra sprinkle of Parmesan.
