Braised Red Cabbage with Smoked Bacon & Apple

- 1 red cabbage (sliced)
- 2 red onions (grated)
- 1 Bramley apple (grated)
- 2tsp Bart smoked garlic paste
- 2tsp Bart ginger paste
- 2 strips orange zest
- Knob of butter
- 1 tsp Bart ground cinnamon
- 1 tsp Bart ground allspice
- 100ml red wine vinegar
- 3tbsp redcurrant jelly
- Pinch of Bart rock salt
- Pinch of Bart black peppercorns
Method
1. Grate the onions and apple, and finely slice the cabbage.
2. Start by frying the bacon in a large, heavy based pan. Once crisp, remove and put to one side, keeping the bacon fat in the pan.
3. Over a medium heat, melt the butter into the fat and add the grated onion, garlic paste and ginger paste. Cook for a few minutes until softened, then add the cabbage, apple, zest and vinegar. Stir to combine, then add the cinnamon, allspice, and redcurrant jelly and stir again. Bring to the boil to melt the redcurrant jelly into the cabbage and season well, then turn to low and cook very gently for 1-1 1/2 hours.
4. Once cooked, add the bacon and heat through, then serve hot.
