Cheeseburger Spring Rolls

Spring rolls with a cheesy beef filling served with a tangy homemade burger sauce! A fusion of American and Asian cuisine to make the most delicious snack.

Cheeseburger spring rolls
- 2 tsp vegetable oil
- 500g beef mince
- 1/4 tsp salt
- ½ tsp freshly ground black pepper
- ½ tsp Bart garlic granules
- 250g pizza mozzarella, diced into medium-sized cubes (approx. 1.5cmx1.5cm)
- 15-20 sheets spring roll pastry
- Vegetable oil, for frying
Burger sauce
- 8 tbsp mayonnaise
- 2 tbsp finely diced pickled gherkins
- 1 tbsp minced onion
- 2 tbsp ketchup
- 2 tsp American or Dijon mustard
- 1 tsp sugar
- ½ tsp Bart sweet smoked paprika
- ¼ tsp salt
- ½ tsp Bart garlic granules
Method
1. Firstly, mix all the ingredients for the sauce in a medium-sized bowl. Set aside.
2. Heat the oil in a large frying pan over a medium-high heat. Add the beef along with the salt, pepper, and garlic granules. Fry until cooked through, stirring often, around 6-7 minutes. Remove from the heat, tip into a bowl, and allow to cool.
3. Once cooled, stir through the diced mozzarella cubes until evenly distributed.
4. Place a spring roll wrapper with one corner pointing towards you. Spoon around 4 tbsp of the beef filling in a horizontal line on the bottom half of the wrapper, leaving 3cm at the bottom.
5. Fold the bottom corner of the wrapper over the filling and then fold in the edges to make an envelope shape. Brush the top point with a little water and roll up to seal the spring roll. Repeat with the remaining ingredients until you have 15-20 spring rolls. Keep the spring rolls and wrappers covered with a tea towel to stop them from drying out whilst you work.
6. Add enough oil to a large pan, safe for deep-frying, to cover the spring rolls. Heat the oil to 150C.
7. Cook the spring rolls in batches until golden brown, around 2-3 minutes on each side. Ensure the oil remains at 150C.
8. Remove from the oil and drain on kitchen paper or a wire rack.
9. Serve the spring rolls warm with the sauce.
