Black garlic caramelised onion and goat's cheese tartlets

Sticky black garlic caramelised red onions and goat's cheese tartlets. Made with buttery, flaky puff pastry. These canapés are easy to make and perfect for serving at your next Christmas or New Years party.

Method

  1. Heat the butter and oil in a heavy based pan over a medium heat.
  2. Add the onions and fry for at least 30 minutes, stirring occasionally until the onions are very soft and caramelised. Once they’ve reached this point, add the black garlic paste, sugar and season with salt and pepper, then fry for another 3-5 minutes. Remove from the heat and tip onto a plate to cool completely.
  3. Preheat the oven to 220C/200C fan.
  4. Unroll your pastry and slice into 12 equally sized rectangles. Use a knife to create a 1cm border on each piece, being careful not to slice through the pastry completely. Spoon the caramelised onion in the centre of each square and top with a slice of goat’s cheese. Sprinkle with a little thyme, brush the edges with beaten egg, and bake for 13-15 minutes, or until golden brown.
