Make the most of the rhubarb season with this easy twist on a G&T. The tartness of the rhubarb helps to offset the bitterness of the tonic, making it both a refreshing and subtly sweet drink.

Rhubarb Syrup
260g rhubarb, chopped
200g sugar
350ml water
Cocktail
120ml Gin
1 lime, juiced
180ml rhubarb simple syrup
300ml tonic water
A sprinkle of Bart Rose Petals, to garnish
Lime slices, to garnish

Method
Add the rhubarb, sugar, and water to a saucepan. Over medium-high heat, bring to a boil, then reduce the heat and simmer 20 minutes. Remove from the heat and allow to cool.
Once cool, strain the syrup through a sieve. Fill your glasses with ice, and in each pour over 60ml gin. Divide the juiced lime between the two, followed by two tablespoons of the rhubarb syrup. Top with chilled tonic water, to taste. Garnish with lime slices and sprinkle over a pinch of rose petals.
