Tomato bruschetta

Fresh and delicious Italian starter or canape

INGREDIENTS

250g mozzarella cheese (torn into small pieces)
20 cherry tomatoes (quartered)
3tbsp olive oil
1tsp balsamic vinegar
3tsp Bart basil
1tsp Bart garlic paste
6 slices bread (sour dough or seeded)
rocket (to serve)

Cherry Tomato Bruschette Basil

METHOD

  1. Put the mozzarella and tomatoes in a bowl with the oil, vinegar, basil and garlic, season and mix together.
  2. Toast the bread, place each slice on a plate and surround with rocket.
  3. Pile the tomato mixture on top and serve.

Note: for canapes, cut the bread into bite size pieces and present on a serving platter. scattered with rocket.
