Fattoush Salad

Simple yet substantial salad.

INGREDIENTS

3 pitta breads
1/2 cos lettuce (shredded)
1/2 cucumber (thinly sliced)
6 spring onions (thinly sliced)
6 radishes (sliced)
1tbsp fresh mint (chopped)
1tbsp fresh parsley (chopped)
1tbsp fresh coriander (chopped)
3tbsp olive oil
1/2 lemon (juice only)
2tsp Bart sumac
1tsp Bart garlic paste

METHOD

  1. Slice the pitta breads in half and grill until crisp. When cool, break into pieces.
  2. Place the salad ingredients in a large bowl, add the fresh herbs and toasted bread.
  3. Whisk together the olive oil, lemon juice, sumac, garlic, salt and pepper. Pour over the salad and toss together.
