Chocolate pecan cookies

Rich indulgent cookies for a tea time treat.

INGREDIENTS

185g dark chocolate
100g butter (at room temperature)
50g light muscovado sugar
85g caster sugar
1tsp vanilla extract
1 egg (beaten)
100g pecan nuts
100g plain flour
1tsp bicarbonate of soda
1/2tsp Bart ground allspice

METHOD

  1. Pre heat the oven to 180C/Gas 4 and line 2 baking sheets with baking paper.
  2. Melt 85g of the chocolate, gently over a bain marie or in the microwave . Beat together the butter, sugar, caster sugar, vanilla extract and egg then add in the melted chocolate.
  3. Stir in the pecan nuts, chop the remaining chocolate and fold that in with the flour, bicarb and allspice.
  4. Put 20 spoonfuls of mixture, well spaced, onto the baking sheets.
  5. Bake at for 10 minutes until firm then cool on baking sheets.

Note: you can use any type of nuts for this recipe but we prefer pecans.
