In a large bowl, mix together the flour, yeast and sugar. Stir in the salt then the water and mix to a soft dough. Turn onto a lightly floured surface and knead for 10 minutes until the dough becomes soft and elastic and looses its mottled complexion.
Divide the dough into eight equal pieces and form into balls. Place on a lightly floured board and cover with oiled cling film or a damp tea towel. Leave for 30-60 minutes until doubled in size.
Meanwhile pre-heat the oven to 230C/Gas 8. Roll the balls of dough into circles and place on baking sheets which have been lightly dusted with flour. Make dimples in the dough with your finger tips.
Mix together the olive oil, zatar and lemon juice and brush it over the dough circles. Bake in the oven for 8-10 minutes until lightly browned. To test of they're cooked through, tap the bottoms of the roles, if they sound hollow, they're done.
